Eggless Apple Cinnamon Muffins

Apple Cinnamon Muffins are perfect to start off a sweet morning. These are hearty and satisfying whole wheat muffins filled with small crispy bits of apples and spiced well with cinnamon.

And, these muffins are special when autumn rolls in. Full of spicy, warm cinnamon, crisp apple bits loaded muffins, savoring with a hot cup of coffee on a cool breezy morning is dreamy. Seriously, these are so yum and good all year round! And, love the buttery cinnamon loaded muffin top.

How to make Apple Cinnamon Muffins?

I like to use granny smith, Honeycrisp, or pink lady apples in the muffins. You can use whichever you prefer. I like the apple bits to remain crisp after baking and don’t want them to feel like apple butter or applesauce.

They aren’t super sweet muffins so if you love the high sugar muffins, you may have to up the sugar in the recipe at least by a tablespoon or two. A lot of sweetness comes from the apple, I use 2 of them. But honestly, one apple is good for making 12 muffins.

You can always swap sugar with maple syrup and skip the topping for healthier option.

Ingredients that you need for making eggless Apple Cinnamon Muffins

Muffins

  • whole wheat flour 
  • milk
  • yogurt
  • cinnamon & allspice
  • salt
  • unsalted butter
  • coconut oil
  • vanilla extract
  • leavening agents
  • apples, chopped small.
  • brown sugar or coconut sugar

Topping after baking

  • melted butter
  • brown sugar
  • cinnamon powder

Tips:

Pre-heat oven to 430F.

Melt the butter and mix in sugar. Then, combine all wet ingredients together. add all the wet ingredients together. Milk, oil/butter, & yogurt

Next, add all dry ingredients- whole wheat flour, spices, baking soda, & baking powder, salt. Mix until everything is combined. Do not overmix.

Fold in chopped apples. I chop the apples into small bits.

Place the liners in the muffin pan. Pour the batter onto each liner.

Bake at 430F for 5 mins. Immediately, bring down the oven temperature to 350F, and bake for 12-14 mins or until a toothpick comes out clean.

While muffins are being baking, melt the butter for the topping and keep it in a bowl. In a separate bowl, combine sugar and cinnamon powder.

Once the muffins are baked, allow them to cool down for a while. Dip the muffin top in butter and then dip the buttered top in sugar-cinnamon powder mix. Repeat this for all the muffins.

Tastes best when served fresh and warm.
