We will be cooking the muffins at 2 temperatures, first at 430F for 5 mins, and then at 350F for 12-14 mins. Pre-heat oven to 430F.
Melt the butter and mix in sugar. Then, combine all wet ingredients together. add all the wet ingredients together. Milk, oil/butter, & yogurt
Next, add all dry ingredients- whole wheat flour, spices, baking soda, & baking powder, salt. Mix until everything is combined. Do not overmix.
Fold in chopped apples.
Place the liners in the muffin pan. Pour the batter onto each liner. Bake at 430F for 5 mins. Immediately, bring down the oven temperature to 350F, and bake for 12-14 mins or until toothpick comes out clean.
While muffins are being baking, melt the butter for the topping and keep it in a bowl. In a separate bowl, combine sugar and cinnamon powder.
Once the muffins are baked, allow them to cool down for a while. Dip top of the muffin in but melted butter and then dip the buttered muffin top in sugar-cinnamon powder mix. Repeat this for all the muffins.
