Ingredients

Muffins

  • 1+3/4 cups whole wheat flour
  • 3/4 cup milk
  • 1/2 cup yogurt
  • 2 tsp cinnamon powder
  • 1/2 tsp allspice
  • 1/2 tsp salt
  • 1/4 cup unsalted butter
  • 1/3 cup coconut oil
  • 2 tsp vanilla extract
  • teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 +1/4 cups apples chopped small.
  • 3/4 cup brown sugar or coconut sugar

Topping after baking

  • 1/4 cup melted butter
  • 1/4 cup sugar
  • 3 tbsp cinnamon powder

Instructions

  • We will be cooking the muffins at 2 temperatures, first at 430F for 5 mins, and then at 350F for 12-14 mins. Pre-heat oven to 430F.
  • Melt the butter and mix in sugar. Then, combine all wet ingredients together. add all the wet ingredients together. Milk, oil/butter, & yogurt
  • Next, add all dry ingredients- whole wheat flour, spices, baking soda, & baking powder, salt. Mix until everything is combined. Do not overmix.
  • Fold in chopped apples.
  • Place the liners in the muffin pan. Pour the batter onto each liner. Bake at 430F for 5 mins. Immediately, bring down the oven temperature to 350F, and bake for 12-14 mins or until toothpick comes out clean.
  • While muffins are being baking, melt the butter for the topping and keep it in a bowl. In a separate bowl, combine sugar and cinnamon powder.
  • Once the muffins are baked, allow them to cool down for a while. Dip top of the muffin in but melted butter and then dip the buttered muffin top in sugar-cinnamon powder mix. Repeat this for all the muffins.
  • Tastes best when served fresh and warm.
