Chilli Garlic Pasta

An ultimate pasta dish that can be served under 30 minutes on any weeknight using ingredients that you probably already have.  Chilli Garlic Pasta is loaded with flavors. Serve it wine and side of garlic bread or roasted vegetables. It is always a winner. 

Sauceless Pasta doesn’t have to be boring. Pasta tossed in chili-garlic infused olive oil, fresh parsley, grated parmesan, and chopped nuts. Top the dish with breadcrumbs for extra flavor. You won’t be missing the cream sauce at all. It is so simple to prepare, just a handful of ingredients and yet so flavorful. When we crave for saucy pasta, we make this.

Our weeknight favorite sauceless pasta recipe is here. When Mr. H steps into the kitchen, something incredibly delicious happens always. He makes this gorgeous, non-greasy, glossy sauce for the pasta with the blend of garlicky oil and starchy pasta water. Just before pasta is done cooking, pasta and almost half a cup of starchy pasta water are tossed directly in the pan of hot garlic oil. When the pasta is tossed in this sauce, it soaks up the flavor and heat creates the glossy layer too.

How to make Chilli Garlic Pasta?

Ingredients that you will need to make this dish –

  • Pasta:  fettuccine, Linguine, or Spaghetti or any other shape of pasta noodle you prefer.
  • Olive oil: It is the main ingredient in this sauce, I recommend using the best-quality extra virgin olive oil
  • Garlic: 4-5 cloves of garlic or more. However, you like it
  • Crushed red pepper flakes
  • Nuts: Chopped almonds, walnuts
  • Garnish: Finely-minced fresh parsley or cilantro or basil and/or freshly-grated Parmesan and or breadcrumbs. I love adding these, but they are totally optional.

Let’s get started.

1.Cook pasta: Bring water to boil in a large pot. Add salt generously. Cook the pasta al-dente.

2. Make the sauce: heat the pan, sauté garlic in olive oil over medium flame.

Add crushed red pepper flakes and nuts, and continue to sauté until garlic is golden brown.

3. Toss the pasta: Once the pasta is ready, transfer the pasta immediately to the sauté pan, along with approximately 1/2 cup of the hot starchy pasta water.  Toss the pasta continuously until it is evenly coated in the garlic sauce. Add in another 1/4 cup of the starchy pasta water, if the sauce looks a bit dry.

4. Garnish the dish: Add Parsely and Parmesan, and salt, red pepper flakes if needed. Top it with breadcrumbs.

5. Serve immediately when it is hot.

  • 450 g dried pasta
  • 1/4 cup olive oil
  • 3 to 4 cloves garlic (very finely chopped)
  • 1 teaspoon crushed red pepper flakes (or more, to taste)
  • 1/4 cup chopped almonds (walnuts or pinenuts)
  • a handful of chopped fresh parsley
  • 1/4 cup breadcrumbs (optional)
  • freshly grated Parmesan cheese (optional)
  • salt to taste

  • Remember to generously salt pasta water.
