Cucumber Idli | Cucumber Savoury Cakes

Cucumber is such a juicy vegetable, we love them in salads, and we love them to have for breakfast by making Dosas/Crepes or Paddus, and Idlis

Do you want to try Cucumber Idli? Cucumber Idlis are quite a popular breakfast option in southern Karnataka, and it is a regular at our home.

Cucumber Idlis are delicious, quick, easy to make, and free of fermentation. So this recipe can be made in a jiffy. Idlis have rich cucumber flavor and give a distinctive taste to the Idlis. Idli rice or rava, cucumber, and salt is the base of the Idli. Lentils are not needed.

If you have cucumbers left that aren’t fresh enough to make salads, use them up by making these delicious Idlis. They are healthy and refreshing with cucumber in every bite of Idli.

Serve them hot with spicy coconut chutney and dollop of ghee.

How to make Cucumber Idlis?

Base of the Idli batter can be whole grain rice or Idli rava. I am sharing the steps for preparing batter using whole grain rice and Rava.

Whole grain rice method (Vegan Option, Total Time: 50 mins ,includes soak time) : This is the traditional way of making cucumber Idlis. I learnt this recipe from my mum. She makes both the sweet and savoury cucumber idlis.

Rice needs to be soaked for at-least 30 mins prior to the preparation, and then it is ground along with coconut to make the thick batter. We keep it thick as cucumber releases lot of water when shredded.

Shredded cucumber is then combined with batter, along with salt. Green chillies can be added to spice up the Idlis.

Batter is then poured into greased moulds and it is steamed until cooked.

You can use Instant pot or regular idlis streamer for steaming these idlis. It takes about 15-20 mins to cook.

Using Idly Rava (Vegetarian Option, Total Time : 30- 40 minutes): When I run out of time, or the only vegetable left in the fridge is cucumber, this is my go-to recipe for making something quick and healthy.

Rava, shredded coconut, cucumber, salt are combined together along with few tbsp yogurt. Let the batter sit for 10 mins.

Spice up the idli by adding green chillies, and add curry leaves, cilantro or any other herbs, ginger for extra flavour. I have skipped it in the picture below as my little one loves it just with cucumber.

This batter will be thick and it is poured into greased moulds and steamed until cooked.

Cucumber Idli – Idli Rava Method

Ingredients

  • 1 +1/2 cup Idli Rava
  • 1 cup shredded cucumber
  • 1/2 cup shredded coconut frozen or fresh
  • 1/4 cup yogurt
  • 1/4 cup water optional, need basis- add 1-2 tbsp at a time
  • Salt to taste
  • 8 -10 curry leaves chopped
  • 1 – 2 tsp grated ginger
  • a handful of cilantro or any other herb of your choice
  • 2 green chilies deseeded

Instructions

  • Mix all ingredients together in a large bowl. If the mixture is too dry, add little water to make a thick batter. If the batter is watery, Idlis will turn sticky.
  • Let the batter sit for 10 mins.
  • In the meantime, heat the steamer. Let the water be hot. Grease the moulds. If you using an instant pot, keep fill water, and turn to saute mode on.
  • Pour batter into the moulds. Fill them up until they are just full. Do not overfill them.
  • Place the moulds in the steamer, and steam them for 15-20 minutes. In instant pot, turn off saute mode, place the moulds in, turn on the steam mode, let it steam for 15-20 minutes.
  • Serve hot with coconut chutney.

Notes

  • Instead of idly rava, you can use rice Rava or chiroti rava, steps will remain the same.
  • Sub cucumber with carrots or beets for variation
  • If the batter is too watery, add extra rava to make firm idlis. if the batter is too dry, idlis will turn hard.
  • Substitute yogurt with cashew yogurt for vegan options.

  • 1 cup idly rice
  • 1 cup shredded cucumber
  • 1/2 cup shredded coconut optional, add for enhanced taste
  • 1/2 cup water use while grinding, rest after mixing in the cucumber
  • Salt to taste
  • 2 green chillies deseeded, optional

Instructions

  • Wash and rinse rice. Soak it for 30 minutes in hot water.
  • Drain the water, and grind the rice, coconut along with salt and water to make the thick, finely coarse batter.
  • Mix in the cucumber. If the batter is too thick add in little water.
  • Heat the steamer. Let the water be hot. Grease the moulds. If you using instant pot, keep fill water, and turn to saute mode on.
  • Pour batter into the moulds. Fill them up until they are just full. Do not overfill them.
  • Place the moulds in the steamer, and steam them for 15-20 minutes. In instant pot, turn off saute mode, place the moulds in, turn on the steam mode, let it steam for 15-20 minutes.
  • Serve hot with coconut chutney.
