Vegan Rava dosa |semolina crepes

Rava dosa is a popular southern Indian crepe recipe which is typically prepared using semolina, rice flour, and some all purpose flour. It is golden and crispy, and has a lacy texture. Served usually for breakfast along with chutney or sambar.

There are myriad ways to prepare rava dosas with different combination of spices and vegetables. One such type is soft and smooth Rava dosa. Rava along with cumin, ginger, and tomatoes are ground together to prepare the batter. Then spoon full of rice flour is added to the batter to get a light crisp bottom for the dosa. This step is optional though.

Batter consistency

Ladle full of batter is poured on to a lightly greased iron skillet, and cook until the sides start leaving the pan.

Soft rava crepes

Rava Dosa / Semolina crepe

Ingredients:

  • 2 cups rava
  • 1 tbsp rice flour
  • 1 chopped small tomato
  • 2 tsp cumin
  • 1 inch ginger
  • 1-2 green chillies (optional, skip this for if you making this for a toddler)
  • salt to taste
  • oil for greasing
  • 4-5 cups of water

Preparation:

  1. Soak rava in water . Drain the water after 10 minutes
  2. add rava along with chopped tomatoes, cumin, ginger, chillies, salt in the mixer. Grind it to a form a smooth batter. Add water sparingly. You may need 3-4 cups of water as rava soaks up all the water while being ground to a paste
  3. Add rice flour and mix well.
  4. Heat iron skillet/pan, grease lightly with oil. when the skillet is heated(use low flame), pour a ladle full of batter on to the pan, and spread it. Cover the lid and cook for a minute or two.
  5. grease the dosa with butter or ghee or oil of your choice, flip and cook for another minute.
  6. Transfer the dosa/crepe to a food warmer, repeat the steps for rest of the batter.

Notes:

  • Green leafy vegetables like spinach can be added while grinding to the batter to make the crepe nutritious. Spices like coriander seeds or red chillies can be added. Add not more than half cup of vegetables for 2 cups of rava.
  • If you a unable to spread the batter on the pan, reduce the flame and allow the pan a cool for a while, and then spread the batter.
  • If the soft is thick, or a harder, then add little water to dilute the batter and try again.
  • rice flour will give crisp bottom to the dosa, you can add rice flour upto 1/4 cup for 2 cups of rava for crispier bottom dosa.
