Saffron Almond Cookies ✨ . . You will need - 1+1/2 cup almond flour 1 tbsp hot milk 10-12 Saffron strands 1/2 cup powdered sugar 1 tsp almond extract 1/2 vanilla extract 1 large beaten egg 1/2 tsp baking powder Pinch of salt Method: - Preheat oven to 350F. - soak saffron stands in hot milk for about 10 mins - place almond flour, powder sugar, salt, baking powder in a large bowl. Add milk, beaten egg, almond &vanilla extract. Mix well - scoop out cookie dough and roll it into a ball. Place it in a baking sheet leaving 1+1/2 inch gap between dough balls. Gently tap the dough to flatten the cookie. Optional : decorate the top of the cookies with nuts of your choice - bake for 12-15 mins or until sides are golden. - leave the cookies on the pan for 5 mins and then move them to a cooking rack to cool down completely.

Linzer Cookies ✨ . Buttery Almond flavored shortbread cookies, spiced with cinnamon and lemon zest are sandwiched with jam of your choice, dusted with powdered sugar. They are crisp, buttery and flavorful. . . Happy holidays ✨

Banana Halwa ✨ . One of my most favorite indian sweet made by Amma. I had to capture this deliciousness which involves cooking well ripe plantains with sugar and ghee for hours! Sharing it with y'all virtually before the last few pieces disappear. ✨

Falafel Buddha Bowl ✨ . . Simple and nourishing falafel buddha bowl with hummus and dill yogurt sauce. There are so many options when it comes to serving falafel. Afia falafels are loaded with flavours, makes it easy to put together a meal that is satisfying and nourishing. This is build your own bowl with @afiafoods falafel topped with hummus and dill yogurt sauce. My bowl has baby greens, brown rice, @afiafoods garlic herb falafel, cucumber, bell peppers, onions, olives and angel sweet tomatoes. How to make it? - bake or air fry @afiafoods falafels - spread baby green spinach or salad mix in a bowl - add cooked brown rice ( I added salt, bay leaves, cumin while cooking rice) - add vegetables of your choice. - use homemade or store bought hummus. - top it with yogurt sauce. Yogurt sauce : - combine 1 cup whole milk Greek yogurt, 1 tbsp lemon juice, 1 tbsp finely chopped dill leaves and 1 tbsp cilantro, 1 garlic clove (grated), 2 tsp olive oil, salt to taste. ✨

Besan Laddu ✨ . Here is my version of laddu recipe - 1+1/2 cup besan 3/4 cup jaggery 1/4 tbsp water // to make jaggery syrup 1/4 cup ghee chopped cashews and raisins Pinch of Cardamon or saffron for flavor. Instructions Prepare jaggery syrup:- Bring 3/4 cup of jaggery mixed with 1/4 cup of water to boil. take the syrup off flame when one string consistency is achieved. Take it off flame, add saffron strands, allow it to cool down a bit but needs to remain warm. Slow Roast flour:- 1.Heat a deep bottom pan, add a tablespoon of ghee. Add chopped nuts. Fry until golden. 2. Take them out and set aside. Add raisins, and allow them to puff up, set aside 3. to the same pan, add the flour and roast the flour in medium flame for 5-10 mins. 4.when the flour is aromatic and color begins to change( light golden shade) turn down the flame to the lowest. Add remaining ghee and stir continuously. 5.In about 10 mins, besan will absorb all the ghee and flour gets a deep golden color and should have a nutty taste. 6. Take the pan out of the stove, and allow it to cool 7. Mix jaggery and flour 8. while the flour is still warm, add nuts and raisins, add jaggery syrup and mix well. take small portion of the mixture into your palm and shape them round. 9. Store it in an airtight container up to 2 weeks �

Banana Dosa ✨ . . How to make it? Soak 2 cups of idly-dosa rice with 1/2 tsp of methi seeds and a tbsp of Ural dal for 2-3 hours. Soak 1/2 cup of Poha in a separate bowl. Rinse and drain water . Blend all ingredients along with 3 large ripe bananas. Batter must smooth and will have thick consistency. Ferment the batter for 8 hours. Add salt and adjust the batter Heat the pan, and pour the batter on to the center of the pan. Cover and cook for a minute. You will see bubbles pop all over the Dosa. Smear ghee and cook on both sides until golden. Serve hot with any syrup of your choice. Dosas will have sweetness from bananas already.

Biscuit Rotti ✨ Kachori in Mangaluru style prepared using flour and stuffed with semolina, coconut and spices. An evening snack that pairs perfectly with hot cup of tea or coffee. . How to make it? You will need - 🔅Dough : 1 cup flour ( wheat or all purpose flour) 1 tbsp hot oil 1/2 tsp turmeric Salt to taste Water for kneading 🔅Filling : 2 tsp oil 1/4 cup rava 2- 3 tbsp finely shredded coconut 1/2 tsp mustard 1/2 tsp urad dal 1-2 crushed red chillies(roasted) or chilli flakes Pinch of turmeric Handful of curry leaves 1- 2 tbsp sugar Salt to taste 🔅Method: 1. Make dough Take flour, salt in a bowl. Add tbsp of hot oil and mix well. And water little by little (approx 1/2 cup) and knead the flour into a pliable dough. Set aside. 2. Prepare the filling: Heat oil in a pan, add red chillies and roast until crisp. Set aside. Once cooled down, crush the chillies. Add mustard seeds, urad dal to the same pan. When dal turns golden, curry leaves, semolina and shredded coconut, roast for a while. Mix in salt and sugar.Take it off flame and mix well. Add in roasted crushed red chillies. 3. Make stuffed poori Take lemon sized dough and roll it into small pooris. Place 2 - 3tsp of the filling on the rolled dough, pull the edges together and seal the mixture in. Flatten the dough and roll it into thick poori. Repeat this for rest of the dough. Fry them in medium hot oil until golden brown. Serve hot with tea or coffee.✨

Sweet Potato falafel wraps ✨ Quick and easy wraps with @afiafoods frozen falafels, wraps, hummus, fresh veggies, and creamy avocado cilantro yogurt sauce for delicious weekday meal. Call this a salad on a wrap. How to make it? 💫 Heat the falafels using the instructions given in package. Bake or air-fry @afiafoods falafels. They can be easily found in HEB or Walmart. 💫 Warm up the sweet potato wraps and spread hummus 💫Top it with spinach, sliced red onion, red/green bell peppers for the crunch, avocado, sweet corn, and tomatoes. 💫Place the falafel on top of the veggies. Drizzle yogurt sauce generously. I used store brought dressing for making this easy meal.

Marble Bundt Cake ✨ . Swirls of fudgy chocolate and tender vanilla cake together create marble like effect inside, appealing adults and kids equally. . How to make it? You will need - 1/4 cup natural cocoa powder 1+1/2 cups sugar 1/4 cup water 1/4 cup semi sweet chocolate 3/4 cup buttermilk 1 tsp vanilla extract 1+1/2 cups all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt 1/2 cup unsalted butter, softened 2 tbsp oil 1 egg room temperature Method: Preheat oven to 325°F . Grease 9 inch cake pan and set aside. Chocolate mix :- Boil water. Mix 1/4 cup cocoa, 1/4 cup chocolate chip, 1/3 cup sugar and set aside. Vanilla cake batter :- Mix together the dry ingredients (1+1/2 cups flour, 1 cups sugar, 1/2 tsp baking powder, 1/4 tsp baking soda and 1/4 tsp salt) in a stand mixer with a paddle until fully combined. Mix 1/2 cup of room-temperature butter and 2 tbsp oil into the dry ingredients on a low speed. Pour in 1 egg and 3/4 cup buttermilk; mix on low until just incorporated. Add in 2 tsp vanilla extract. Scrape down the sides of the bowl with a spatula, then beat on medium-low speed for about 30 seconds. Pour half of the batter into a separate bowl. Chocolate batter: In the other bowl, convert the vanilla cake batter into chocolate cake batter. Mix the chocolate mix to the bowl of vanilla batter on a low speed until combined and set aside. Alternate and pour vanilla and chocolate batter on to the cake pan. Bake for 50-60 mins, until toothpick comes out clean. Allow the cake to cool for 30 mins in the pan, and then transfer it to a wire rack. Slice when the cake has cooled down fully ✨
