Chilli Garlic Pasta

An ultimate pasta dish that can be served under 30 minutes on any weeknight using ingredients that you probably already have.  It is loaded with flavors. Serve it wine and side of garlic bread or roasted vegetables. It is always a winner.

  • 450 g dried pasta
  • 1/4 cup olive oil
  • 3 to 4 cloves garlic very finely chopped
  • 1 teaspoon crushed red pepper flakes or more, to taste
  • 1/4 cup chopped almonds walnuts or pinenuts
  • a handful of chopped fresh parsley
  • 1/4 cup breadcrumbs optional
  • freshly grated Parmesan cheese optional
  • salt to taste


  • 1Cook pasta: Bring water to boil in a large pot. Add salt generously. Cook the pasta al-dente.
  • Make the sauce: heat the pan, sauté garlic in olive oil over medium flame. Add crushed red pepper flakes and nuts, and continue to sauté until garlic is golden brown.
  • Toss the pasta: Once the pasta is ready, transfer the pasta immediately to the sauté pan, along with approximately 1/2 cup of the hot starchy pasta water.  Toss the pasta continuously until it is evenly coated in the garlic sauce. Add in another 1/4 cup of the starchy pasta water, if the sauce looks a bit dry.
  • Garnish the dish: Add Parsely and Parmesan, and salt, red pepper flakes if needed. Top it with breadcrumbs.
  • Serve immediately when it is hot.


  • Remember to generously salt pasta water.
