Summer calls for juicy and refreshing salads, and always consists of watermelons! Pairing watermelon with cucumbers may sound unusual, but it is just amazing.
How to make Fresh Watermelon Salad?
To make this recipe, you will need –
- watermelon
- red onions
- cucumbers
- pitted olives
- mint
- white wine vinegar or lime juice
- salt
- pepper
- sliced jalapeno (optional)
- cheese(optional)
- olive oil
- fresh greens (spinach, red lettuce, arugula, or any other greens of your choice
Method:
- Place cubed watermelon, sliced cucumber, mint, sliced olives, red onions in a large bowl.
- In a small bowl add olive oil, smashed half jalapeno, white wine vinegar, salt & mix together.
- Pour the dressing over the freshly cut salad and toss. Season to taste
- Arrange the fresh greens in a serving bowl/ plate top that with Salad and serve.

Salad
- 3 cups cubed watermelon
- 1 small cucumber
- 1/2 cup thinly sliced red onion
- 3 tbsp chopped mint
- handful of fresh greens
- 1/4 cup pitted olives
- paramesan or feta cheese for topping
Dressing
- 1 tbsp olive oil
- 2 tbsp white wine vinegar or lime juice
- 1/2 Jalapeno
- salt and pepper to taste
- Place cubed watermelon, sliced cucumber, mint, sliced olives, red onions in a large bowl.
To make the dressing, take olive oil, smashed half jalapeno, white wine vinegar, salt in a small bowl & mix together until combined.
