Mint-Peas Pulao | Instapot Mint-Peas Pulao

Mint – Peas Pulao, also known as Mint pilaf, Pudina rice. You are going to love this colourful fresh mint pulao. This one- pot meal is made with fresh herbs and spices. Mint infused rice makes it so fragrant.

It is a light dish, decently spiced, naturally gluten-free and vegan. Almost anyone can enjoy this dish. Spice up the dish by varying the amount of chillies used.

This pulao is basically a rice recipe flavoured with mint and fresh peas. Feel free to use any other vegetable of your choice. Potatoes and carrots go very well with this recipe . Make sure to adjust the salt for extra veggies. You can make this in an instant pot or pre-cooked rice can be tempered with mint sauce and veggies. I am sharing both the recipes.

It is surely a winner dish for its simplicity, freshness, taste and aroma.

How do we make Mint Pulao ?

Using Pre cooked Rice:

Firstly, mint leaves along with coconut, a few coriander leaves and green chillies are ground to a paste. I used grated coconut that is frozen, and one green chilli. You can spice up the dish by adding 2-3 chillies.. Coconut adds a rich and creamy flavour to the dish.

The mint paste along with fresh peas is sautéd with whole spices like cinnamon, cumin, cloves and bay leaf. You can add star anise, cardamom. Too many whole spices can take away the aroma of fresh mint. I like the fresh herb scent in the rice. So I added just a few whole spices.

Next, add pre-cooked rice and gently mix. Typically, basmati rice is used. I used jasmine rice this time. Sprinkle few drops of lime for a bright citrus accent. Serve along with plain yogurt or cucumber raita.

Using Instant Pot:

Turn on instant pot in saute mode. When it is hot, add oil or ghee, add cinnamon stick, bay leaves, cumin, ginger-garlic paste and saute for a minute.

Next, make mint coriander paste(same as given above). Coriander paste is mixed in with peas and cooked for a minute.

Mix in washed rice, add water. Adjust the salt. and then Pulao is cooked in Rice mode. It will be ready in 12 minutes!

Sprinkle lime juice, garnish with cilantro. You can also add roasted cashews. Adds a nice crunch to the pulao.

Ingredients: 1 Cup =240 ml

  • 11/2 cups long grain rice
  • 21/4 cups water
  • 1 cup fresh peas
  • 1 cup mint leaves
  • 1/4 cup coriander leaves
  • 1/4 cup coconut
  • 2-3 green chillies
  • 1-2 bay leaf
  • 1 tsp cumin
  • 4-5 cloves
  • 1-2 cinnamon stick
  • 2 tsp ginger – garlic paste
  • 1 tbsp coconut oil
  • 3 tsp lemon juice
  • salt to taste

Preparation:

  1. Wash and clean the rice, add rice and 2¼ water in an Instant pot and cook for 12 minutes. Allow rice to cool down. Or you can use up pre-cooked rice.
  2. while rice is being cooked, blend mint, coriander, green chillies together, and keep it ready. You can add 2-3 tbsp water if it is being difficult to blend.
  3. In a deep bottom pan, heat oil. Add bay leaf, cinnamon stick, cloves, ginger garlic paste. saute for a minute.
  4. Add mint paste along with fresh peas. Continue to cook until the paste thickens.
  5. Add pre-cooked rice, mix gently.
  6. Sprinkle few drops of lemon, and serve hot.

INSTANT POT METHOD

  1. Turn on the saute mode.
  2. Once the pot is heated, add oil, cinnamon stick, bay leaves, cumin. Let it turn aromatic.
  3. Add peas, coriander-mint paste, ginger-garlic, and cook for a minute.
  4. Mix in rice, add salt, and water.
  5. Turn off saute mode, and cover the lid.
  6. Start rice mode, and cook for 12 minutes
  7. When the pressure releases, add in lemon juice, combine well.
  8. Garnish with cilantro or roasted cashews.
  9. Serve hot with yogurt or raita.
